4 very ripe plums
12 fresh mint leaves
1.5 oz white rum
1 oz lime juice
1 oz agave nectar
1 oz ginger simple syrup
Slice 3 plums over a cocktail shaker, add in lime juice and 6 mint leaves. Muddle until plums are juiced and mint leaves are crushed.
Add in rum, handful of ice, and shake.
Strain liquid into a glass, add in ginger simple syrup, agave nectar, remaining mint leaves, and plum slices. Add in ice and stir ingredients together.
Top with a few ounces of sparkling water and enjoy responsibly!
